Shopping is done, sandwiches are made...now I just have to have the stomach to eat them!
Day 1 was brutal. I ate an all natural peanut butter sandwich and half a chocolate bar of lindt 70% dark chocolate. I never knew chocolate could be so bitter and I don’t know what possessed me to keep eating it. Note to self - take more healthy snacks and take it easy on the dark chocolate.
Day 2 not much better. One soggy spicy turkey breast sandwich with Dijon mustard, cucumbers, lettuce and tomatoes. Cottage cheese, carrots and pumpkin seeds for snacks...oh and one square of dark chocolate. I noticed that dark chocolate tends to curb your appetite...well for a bit anyways. Note to self -this cold sandwich thing isn’t working out so I'm gonna try bringing a warm healthy lunch for the remainder of the week.
Day 3 - today - it's Scott's bday and we're going to Dantees for lunch. woohoo! That means sleeping in this morning.
And I'm not even gonna mention what I had for dinner...let's just start with fixing the lunch situation...then we'll graduate to dinner.

So, not sure you'll go for this, but I discovered an AMAZING healthy kale salad last week. I made it for V-Day and seriously was happy so much was left over b/c I had it as part of lunch the next two days too... here's the link: http://www.wholefoodsmarket.com/recipes/585

Also... I LOVE dark chocolate! Try something in the 56% range... :)
